Lemoncello Tea Party Ideas from Feather Grey

I've invited friends over this weekend for a last minute gathering as the sun has been shining this week (fingers crossed the weather will hold out for a few more days!) and it seemed fitting to use our very own range of lemoncello partyware for the occasion and at the same time, put a little blog together and show you how easy it can be to create this pretty tea party at home too.

I'm also going to share a delicious home-made lemonade recipe with you and scrumptious cupcakes topped with icing and coconut, which are simply divine!

This is one of my favourite cupcake recipes, it's so light and I love the combination of lemon and coconut.

LEMON CUPCAKES WITH A COCONUT TOPPING
Lemoncello cupcake treat cups

Makes 12
Preparation time 10 minutes
Cooking time 25 minutes

INGREDIENTS
125 g soft butter
125 g self-raising flour
125 g caster sugar
2 tbsp milk
2 large eggs
Finely grated zest of 1 small lemon
125 g soft unsalted butter
250 g icing sugar, sifted
Juice of 1 small lemon
Shredded coconut
Deep 12-hole muffin tin and 12 paper cases or baking treat cups

METHOD

  1. Line the muffin tin with the paper cases. Put all the cake ingredients into a bowl, and beat with an electric whisk until evenly combined and smooth
  2. Make the icing: put the butter and half of the icing sugar into a bowl, and beat with an electric whisk until evenly combined and smooth. Add the lemon juice and the remaining icing sugar, and beat again until light and fluffy
  3. Spread the icing over the cold cup cakes, and decorate with shredded coconut

Here’s my favourite home made lemonade recipe to serve your guests.
It's super easy to make, so easy in fact you can get the kids to help too!

HOMEMADE LEMONADE
Lemoncello Tea Party Ideas from Feather Grey

Makes 1 jug
Preparation time 10 minutes

INGREDIENTS
3 unwaxed lemons, roughly chopped
140g caster sugar
1l cold water

METHOD

  1. Tip the lemons, sugar and half the water into a food processor and blend until the lemon is finely chopped.
  2. Pour the mixture into a sieve over a bowl, then press through as much juice as you can. 
  3. Top up with the remaining water and serve with plain ice or frozen with slices of lemon and strawberries
